I’m sure I’m in good company when I declare that Fall is my absolute favorite season. It touches our senses in the most dramatic of ways. The sight of leaves changing, the feel of cooler temperatures, the sound of rustling leaves, the smells of baking rising from our kitchens, and the taste of goodness on our palate is an explosion of goodness that puts a smile on our face.
Ecclesiastes 3:3 says,
There is a time for everything, and a season for every activity under the heavens.
In the Summer season, our friends and family gatherings are outside around the barbecue, but as the season of Fall approaches, our parties and dinners tend to migrate indoors to the smells of all things pumpkin and apple.
I’ve always had a thing for baked apples with a good dose of cinnamon thrown in. My Thanksgiving pie menu is never complete until it has an apple pie on it. My all-time favorite apple pie recipe comes from my mother-in-law. I do believe the cream is the secret!
Simple Apple Pie Recipe
2 cups all-purpose flour
1 teaspoon salt
2/3 cup butter
6-7 tablespoons cold water
6-8 Apples (Granny Smith are a great choice)
1 tablespoon lemon juice
1/2 cup brown sugar
1/2 cup white sugar
3 tablespoons flour
1/2 teaspoon cinnamon
1/8 teaspoon salt
1/2 pint whipping cream
1 tablespoon vanilla
For the crust: Stir together flour and salt. Cut in butter until pieces are the size of small peas. Sprinkle 1 tablespoon of water and toss with a fork. Repeat until dough is moistened. Form dough into a ball. On a lightly floured surface, take half the dough, and roll it into a circle. Roll the other circle and cut into strips to make a lattice top.
For the filling: Peel and thinly slice apples and then toss in lemon juice. Combine the sugars, flour, cinnamon, and salt. Cover a 10 inch pie pan with crust and layer the apples and sugar mixture (mixture, apples, mixture, apples-for several layers) in the crust. Mix vanilla and whipping cream; pour over apple layers. Lattice the top or slit a flat crust. Lightly sprinkle crust with a cinnamon/sugar mixture.
Bake at 350 for 50-60 minutes. Serves 8.
This recipe can also be adapted to make mini apple pies in a muffin tin! They’re perfect for serving up on a pretty tray for parties!
Whether you serve up pretty pies on a silver platter or not, remember that gathering together with friends and family is more important than any amount of food we can offer to fill our bellies.
And let us consider how to stir up one another to love and good works, not neglecting to meet together, as is the habit of some, but encouraging one another, and all the more as you see the Day drawing near. Hebrews 10:24, 25
Time together is about encouraging one another and building each other up. Personally I can think of no better way than over hot apple pie, but if apples are lacking, I won’t let that stop some good conversation around the table.
